Micro-Greens are fast and easy to grow. Just like their name suggests these tasty little seedlings are tiny
yet pack a powerful nutritional punch. Micro- Greens like sunflower shoots, radishes, arugula, and kale
grow super-fast. In as little as 10-12 days you can go from seed to harvest. Micro-Greens can be grown
indoors, saving space in the garden, and providing year-round greens in even the coldest regions.
Radishes : 21-30 Days
Radishes can grow from seed to harvest in about 21 -30 days when planted in rich soil and ideal
temperatures. This cool season crop will thrive in temperatures around 50-70 degrees Fahrenheit but
will continue to grow in even cooler weather. Try succession planting these zesty little garden treasures for a continued harvest all spring or fall .
Spinach: 30 Days
This hearty leafy green will survive in temperatures as low as 15 degrees Fahrenheit. Spinach can grow

Kale can be harvested while small and tender in as little as 30 days. Kale is extremely cold hearty and is
tastiest when grown in cool weather. Kale can be grown as a cut and come again crop by simply
harvesting from repeatedly …make sure to leave the inner leaves for new growth. Kale can continue to
grow well into winter in many grow zones.

Boy Choy is a Chinese cabbage that grows best in cool weather. Boy Choy baby leaves can be harvested
early (30 days), or this fast-growing cabbage can be grown to full head in 45-60 days.
Swiss Chard: 30-45 Days
This crop is often grown for its vibrant rainbow-colored stems. Swiss Chard is in the beet family and is
often eaten fresh in salads, as well as steamed. The baby leaves are ready to be harvested from in as
little as 30 days. For a continued harvest , cut baby leaves from outer stems and leave inner stems for
continued growth. Swish Chard is a mildly hearty green that can withstand light frosts.
